Cypriot Filos sheep’s milk halloumi is, as the name suggests, made from the majority of sheep’s milk and is a very versatile cheese. It can be eaten on its own with fresh fruit, salad or wine. Halloumi can also be grilled, fried and boiled, as it does not melt when heated. To reduce the saltiness, halloumi can be rinsed or soaked in cold water. Try our wonderful recipes.
