The base of Filos Kalamata olive paste are Greek Kalamata olives and Greek extra-virgin olive oil, as well as herbs. The paste is pureed to be suitably flexible. A little grainy texture gives a nice mouth feel. Mediterranean herbs give a suitable flavor, but do not mask the flavor of the Kalamata olive. The acidity and freshness of olive paste comes from vinegar.
